1. Maturity Time

Most jujubes grow and mature around October and can only be eaten after the frost. Those that have not been frosted taste a bit astringent, while those that have been frosted taste better and will fall off as a result. The way to judge whether it is ripe is to judge by the color of the fruit stem. If its fruit stem is reddish brown, it means that the fruit is ripe. If not, you need to wait for a while.

Its fruit is nearly spherical, yellowish brown or tan when ripe, and the axis of the infructescence becomes noticeably larger. The shape of the fruit is like a "卍". Therefore, it is also called longevity fruit.

2. Harvest time

There is actually no exact time to harvest jujubes. They will fall naturally after frost, and you can just pick them up every morning. The fruit branches can be cut off and placed in a cool place. They can be sold and eaten in about 7 to 10 days. Its fruit can be eaten raw when it is ripe. There is no core inside. Its seeds are outside the flesh. It tastes sweet with a slight astringency.
