How to choose grapes


1. Choose ripe grapes with high sweetness

There are many varieties of grapes on the market. There is no need to be picky about the variety when making wine. Just choose ripe grapes. This will speed up fermentation and make the wine sweeter.

2. Grapes with individual flavors

Most of the grapes sold around us are Kyoho grapes, which are large in size, thin-skinned, fleshy and full of water, and are the first choice for most people to make wine.

There are also some scented grapes, such as rose-scented grapes: they have a rose scent, are relatively small, have a slightly thicker skin, and are brightly colored after being made into wine. They are also very popular!

Of course, if your home is close to a vineyard, you can also choose Cabernet Sauvignon and Merlot grapes used in professional red wine making, which have a stronger fruity flavor.

Wine making steps

1. Choose the right grapes

1 jin of grapes can produce 6-8 liang of wine. Those who are making it for the first time can buy 5-10 jin to practice. Taste the sweetness before buying, and be sure to buy grapes that are sweet and not astringent.

2. Wash grapes with salt water

Soak grapes in salt water (3% concentration) for 10-15 minutes. The main purpose is to disinfect and sterilize. The white film on the surface of the grapes does not need to be rubbed off. Fermentation will be faster and better with the white film. After soaking in salt water, wash the grapes 1-2 times with clean water and remove the rotten grapes.

3. Remove the grapes and dry them

Bunches of grapes are not easy to dry, so they must be picked first. Friends, don't be lazy. Use scissors or a knife to cut them off. Don't pick them directly as they can easily form openings and breed bacteria.

After picking, place them on a sieve to dry. Make sure they are completely dry and cannot contain any raw water!

If you have enough space at home, you can lay it flat to dry. Don't expose it to strong sunlight, and keep it moist!

4. Add sugar and crush the grapes

Huahua has 10 kilograms of grapes here, and is going to add 3 kilograms of white sugar (medium sweetness). Add it in 3 times when kneading, so that the grapes are easier to juice. Just rub with your bare hands and wash them clean. Friends who like cleanliness can wear disposable gloves

It is best to ask your family to knead it together. There is strength in numbers. This is Huahua’s experience!

5. Pour into a large container after kneading

The containers here are specially purchased glass jars, which have been sterilized by hot water. The containers used when making wine must be sterilized. Don't fill it too full, leave some space for fermentation.

6. Wait for fermentation

After putting it into the container and sealing it, place it in a cool place at home, away from sunlight. Don't open the lid out of curiosity. Because we have added sugar during the kneading process, there is no need to stir it later. The whole fermentation process takes about 20 days.

After about a week, the wine will start to separate into water and flesh, which is a good start. Wait another 2 weeks and you’ll be done!

7. Filter

The longer the wine is brewed, the stronger the wine taste will be. Huahua doesn't like wine that is too strong, so she opened the lid and filtered the residue on the 22nd day, using a filter and two layers of gauze to filter it.

If the rest can’t be put in, put it in the beverage bottles you usually save and you can drink it anytime~

8. Save

Homemade wine doesn't have any chemical additives, so you must preserve it well. If you want to drink it normally, you can divide it into small bottles. If you want to keep it for the New Year, it's best to store it separately. Don't open it and put it in a cool and ventilated place at home.
