What vegetables are suitable to grow in winter?

As winter approaches, the temperature gradually drops and many plants begin to wither. Still, vegetables are vital to the human diet, so people still grow some cold-resistant varieties during this season. Let’s take a look at what vegetables are suitable to grow in winter?

1. Spinach

This cold-resistant vegetable is widely grown in rural areas, especially in the north, where it is almost a standard winter vegetable. Spinach can germinate and grow in temperatures as low as -4°C. It not only tastes good but also has high nutritional value, making it an ideal vegetable choice in winter.

2. Coriander

Known for its unique aroma, cilantro is often used in cooking to enhance flavor. It can grow at temperatures between -1°C and -2°C and has low soil requirements, making it an ideal choice for winter planting.

3. Wutacai

This vegetable is very cold-resistant and can grow in an environment of minus eight degrees Celsius without being damaged. It is usually sown in late autumn and will germinate after four days. Wutacai tastes better in cold environments and is a common vegetable in the north in winter.

4. Leek

Chives are extremely cold-resistant and can grow in an environment of minus five degrees Celsius. It does not require much light, so it grows well in low-temperature, low-light environments in winter.

5. Chrysanthemum

As a common ingredient in hot pot, Chinese chrysanthemum is easy to grow and semi-hardy, making it suitable for cultivation in Anhui, Guangdong, Hubei, Shandong and other places. It prefers low light and is a good choice for winter planting.

6. Winter Vegetables

As the name suggests, wintergreen has excellent cold resistance and can grow in winter even in open air conditions. It is one of the main vegetables grown in winter.

7. Radish

Radish is a semi-hardy plant and its seeds can germinate even at a low temperature of 2-3℃. Radish seedlings can withstand high temperatures of 25°C and low temperatures of minus 2-3°C, making them very suitable for winter planting.

8. Chinese cabbage

Especially the Shanghai Qing variety, which has strong cold resistance. Although it grows best in an environment of 15 degrees and sufficient light, it can also safely overwinter in temperatures as low as minus two to three degrees. There are many varieties of Shanghai Qing that are suitable for winter planting.

9. Cabbage

Cabbage is cold-resistant and can withstand temperatures as low as -5-6°C. It is suitable for planting in humus-rich soil, and grows stronger and tastes better under severe cold conditions.

10. Rapeseed

Rapeseed prefers a cool environment, and planting in winter can meet its growth needs. It is low temperature tolerant and cold resistant, and will germinate quickly after planting, but care must be taken to plant it at temperatures above 4°C.

11. Snowberry

This plant thrives in the snow, and its purple-red leaves are particularly bright in the snow. People usually pickle its stems and leaves for consumption.

The above is an introduction to some vegetable varieties suitable for winter sowing. You can choose suitable varieties for planting according to the local climate and environment.
