What is Evergreen?

It is Chinese cabbage, which is one of the well-known specialties in Ningbo and is also a famous dish of Han flavor. Its emerald green color is very similar to the ornamental plant Dieffenbachia, so it is often called "Dieffenbachia".

What does Evergreen look like?

Dieffenbachia is a perennial evergreen plant with rectangular, lanceolate or oblanceolate leaves, about 15-50 cm long and 2.5-7 cm wide. The top of the leaves is sharp and the base is slightly narrow.

How to make Evergreen

1. Cold salad

First, put the evergreen in a basin and check if there are any impurities, then pick them out, wash it and soak it in warm water for 2 hours. Put the peanuts into a cold oil pan and slowly stir-fry them. After the evergreen is softened, wash it three times, pour out the water, squeeze it, and put it in a basin. Use garlic tongs to mince the garlic and put it in the basin. Add a little white sugar, add appropriate amount of light soy sauce, and finally add the stir-fried peanuts.

2. Hot mix

(1) First, soak the dried evergreen cabbage heart in cold water for an hour to remove impurities in the evergreen cabbage heart;
(2) After the evergreen has been soaked, take it out and squeeze out the water, then blanch it in boiling water for one minute;
(3) After blanching, remove the fish from the water immediately and squeeze out the water with your hands;
(4) Add sesame oil, minced garlic, minced green onion, salt, chicken powder, and sugar to a bowl and mix well. If you like spicy food, you can add a little chili oil;
(5) After mixing the above sauce, you can pour it on the evergreen vegetable heart. This way the evergreen has the best taste.
