What is Meicai?

Meicai, also known as Huizhou tribute vegetable, is made from fresh pickled vegetables. It matures around March and April every year. It is a spring vegetable and a famous traditional specialty of Lingnan. Its main producing areas are Meizhou and Huizhou in Guangdong.

What does Meicai look like?

Meicai looks similar to mustard greens and is a variant of mustard greens. The plant is about 150 cm tall, with deeply fissured leaves and wrinkled edges. After drying, it turns golden in color and has a fragrant aroma. It is a specialty of my country.

Preserved mustard greens

1. Preserved pork with preserved vegetables

First, boil the pork belly thoroughly, then cut it into slices, simmer it over low heat until it is cooked, put it into a bowl, top it with preserved vegetables, and after it is steamed, turn the meat upside down on a plate.

2. Steamed pork with preserved vegetables

First, wash and slice the pork, soak the pickled mustard greens in water until soft, then add seasonings to the pork and mix well. Marinate for two hours and finally steam it for 10 minutes.

Meicai is also called "Huizhou tribute vegetable". After being pickled, its taste is very outstanding and its nutritional value is also high. It has the effects of enhancing digestion, clearing away heat and relieving summer heat, promoting fluid production and quenching thirst, relieving fatigue, and eliminating stagnation and strengthening the stomach.
