1. When is it mature?

Yacon is usually planted in spring and will be almost mature in autumn. To determine whether it is mature, you can observe the small yellow flowers on the tip of the stem. Around October, the bundles of small yellow flowers on the top will wither, which means that the yacon underneath is ripe and can be dug out at this time. It is usually available on the market in late October or early November. Please note that the taste of the newly ripened fruit is lighter and not particularly sweet, and the sugar content gradually increases afterwards. Note that after digging out the yacon, in order to ensure planting next year, you need to cut off the bulb on the top of the fruit, then place the bulb in a cool place to dry, then soak it in disinfectant water to disinfect it, and then store it in a dark and ventilated place until it can be planted next year.

2. How to save

If you buy and cut the yacon, you can only soak it in clean water to prevent oxidation. It can only be kept for half a day or a day. If you want to eat it soon after you get home, you can store it in a natural environment, away from strong sunlight, so it can be preserved for about 3-7 days. If you want to store it for a longer time, you can put the yacon in the refrigerator. This way the storage time will be longer, up to 1-3 months, and the taste may change.
