Yacai is a kind of pickled vegetable made by cutting the tender stems of mustard into strips and pickling them . The raw material is green vegetables, which are called Yacai in Sichuan .

There are two types of bean sprouts: salty and sweet. The salty flavor is more common in Sichuan, and can generally be found in Nanxi, Luzhou and other places in Sichuan. Salty bean sprouts are fried with minced meat, and their salty and fragrant taste is very popular.

Sweet sprouts are mostly found in Yibin, Sichuan . Because sprouts are fragrant, sweet, crisp, tender and fresh, they are an indispensable dish in the daily diet of Sichuan people.

Sprouts have a fresh and tender texture and a very fragrant taste, so they are often used as seasonings, often in soup bases for seasoning. Of course, sprouts can also be added to stir-fried shredded pork.

The most authentic Sichuan salted sprouts are golden in color and fragrant. It is best to choose homemade ones. The most delicious ones are pickled in old clay pots for a year, and one pot only weighs 50-60 kilograms.

The traditional method of making sprouts is to use salt (peppercorns, chili peppers, and ginger can be added appropriately) without any additives, otherwise the taste will not be authentic. The specific method is as follows:

(1) First, wash and chop the sprouts. The finer the better. Cut the dried chili into small pieces about 1 cm thick. Slice the garlic and set aside. Heat a pan and add an appropriate amount of cooking oil.

(2) When the oil is hot, add the chopped chili and garlic. When the chili turns golden brown, add the chopped bean sprouts. The bean sprouts have salt in them, so you don’t need to add salt. You can add MSG, minced meat, etc. according to your personal taste. Stir-fry for about one minute before serving.

(3) There are many ways to eat bean sprouts. They can be used as pork with sprouts, as filling for steamed buns, or as a pure vegetarian dish. The most common dish is pork with sprouts, which is also called "shaobai" in Sichuan . The meat is on top and the sprouts are on the bottom. The meat is fat but not greasy, and the sprouts are very tasty.
