The difference between green pepper and red pepper

1. Differences

There is no essential difference between green peppercorns and red peppercorns. Both are shrubs belonging to the Rutaceae family. There are differences in appearance color. Green peppercorns are gray-green, while red peppercorns are brown-red or purple-red, which are darker in color. Green peppercorns are freshly harvested peppercorns and are purely natural, while the latter are processed, having been dried or roasted, so that the color of the skin turns red. There is a slight difference in taste. Green peppercorns are fresher and smell more fragrant. They are usually refined and used for cold dishes to enhance the taste of the dishes. Red peppercorns are more spicy and do not smell that spicy, but they are more fragrant when used for cooking.

2. Regional differences

There are also slight differences in the areas where large-scale cultivation is carried out. The main production areas of the former are Jilin, Heilongjiang, Liaoning, Jiangsu, Hebei and other regions, and they are also distributed in Fujian, Hubei, Anhui, Inner Mongolia and Hunan. The latter is mainly produced in Shanxi, Shaanxi, Hebei, Gansu and other places. In addition to these, it is also distributed in Sichuan, Shandong, Qinghai and other places.
