Lotus root and pig's trotter soup

The elders in my family often say that we should eat some "white food" after the beginning of autumn to clear the heat of summer. Lotus root is one of the "white food". It happens to be a fresh seasonal vegetable. Boiling pig's trotter soup can not only clear away heat and dampness, but also beautify and replenish qi and blood~

1. Blanch the pig's trotters in cold water

Shave the hair off and clean the fresh pig's trotters, chop them into small pieces of 3-5 cm in length, and blanch them in a pot of cold water over high heat until the water boils out of the blood. The process takes about 5 minutes.

2. Prepare lotus root, green onion and ginger

Lotus roots are usually chosen to be smooth lotus roots, which have a soft and glutinous texture and taste better when stewed. When buying, pay attention to choosing the darker and thickest lotus root nodes, which are usually smooth lotus roots. Cut the lotus root into medium-sized pieces and prepare the ginger and green onions.

3. Rinse the pig's trotters after blanching

After blanching, rinse the pig's trotters under the tap and remove the foam on the meat.

4. Put the stew pot on

You can cook it in a pressure cooker, casserole, or multi-function electric cooker. First, put ginger slices and 2-3 scallions at the bottom of the pot. If you like strong flavors, you can add star anise and chili shells. Add the pig's feet and water to cover the ingredients by about 5-10 cm, and prepare to make soup.

5. Stew with high heat

It is more convenient to use an electric cooker. Just add the lotus root in the last 40-30 minutes. Bring the stovetop casserole to a boil over high heat, then turn to medium-low heat for 20 minutes, add the lotus root, and cook for a final 20 minutes. Using a pressure cooker is more troublesome. It is recommended to cut the lotus root into large pieces and put it in together. After inflating it over high heat, switch to medium-low heat and cook it for 20 minutes.

6. Tips

In addition to lotus root, you can also add corn and peanuts to replenish qi; be sure to add enough water before stewing the meat, and try not to add water in the middle to ensure the original flavor of the soup. If the soup is dry, it is best to add boiling water. This is Huahua's experience~
