What is Malantou?

Amaranthus is a plant of the Asterales family, also known as Amaranthus, purple chrysanthemum, chicken intestine, field chrysanthemum, red stem vegetable, crab head, etc. It matures and goes on the market in spring from February to May. The main producing areas are Sichuan, Yunnan, Guizhou and other places.

What does Malantou look like?

The stem of Amaranthus is upright, the plant height is about 30-90 cm, with short hairs on the upper part, the leaves are obovate-rectangular, the leaves are entire, there is a layer of ligulate flowers, and the achenes are obovate-rectangular.

How to make Malantou

1. Cold-mixed Malantou

Wash the water of the amaranth, drain it, put it into the pot and blanch it, take it out and drain the water, cut it into small pieces with a knife, add peanuts, salt, sugar, vinegar, soy sauce, etc., mix well and it is ready to eat.

2. Malantou mixed with eggs

Soak the Amaranth in clean water for about 30 minutes, then blanch it and set aside. Beat eggs in a hot pan, add Amaranth, salt, chicken essence, etc. and stir well.
