Dandelion is the young leaves of the plant Ilex oleraceus of the Asteraceae family. Its medicinal name is Patrinia scabra, and its synonyms are girl flower and deer intestine horse grass. It is commonly known as dandelion among the people. Its aliases include heavenly fragrant vegetable, bitter pod, sweet horse vegetable, old stork vegetable, and coriander without coriander. The season for eating dandelion is generally April and May. It is a wild vegetable that grows in most parts of my country.

What does bitter vegetable look like?

Dandelion is the whole herb or root of Sophora flavescens, a perennial herb, 10-30cm tall, glabrous all over, with a few or many clustered stems, erect or oblique, and basal leaves rosette-shaped, linear-lanceolate, oblanceolate or linear, about 7-20cm long.

How to cook bitter vegetables

1. Cold salad

Remove impurities from the bitter greens, wash them, blanch them in boiling water for 2 minutes, quickly take them out and soak them in cold water to cool, then drain the water, cut them into sections, put them in a bowl for later use, mix the mashed garlic, salt, light soy sauce, sesame oil and vinegar in a small bowl, pour it on the bitter greens and mix well.

2. Garlic bitter herbs

Pick and wash fresh bitter herbs, boil them in boiling water until they change color. Don't boil them for too long or the color will look bad. Slice the potatoes, steam them, and mash them in a food processor. Heat oil in a pan, add scallions, ginger, and garlic and stir-fry until fragrant. Add the bitter herbs and the three old seasonings, light soy sauce, and stir-fry. Add the mashed potatoes and salt and stir until cooked. Add chicken essence and Zemeng scallion oil, put white sesame seeds in a bowl, remove from the pan, press down in a bowl, and place on an inverted plate.

Therefore, eating bitter vegetables often has a certain therapeutic effect on diseases such as colds and fever, chronic bronchitis, tonsillitis, jaundice hepatitis, pharyngitis, bacterial dysentery and so on.
