This way, by the time the spinach stops growing in late November, the seedlings will be large enough to safely overwinter.

3. Eat spinach

This spinach safely overwinters in the soil in seed form and can be sown before the soil freezes in late November. In the spring of the second year, as the temperature rises, the seeds will germinate.
