What is cinnamon and the difference between cassia bark and cassia

1. What is

It is also called spicy cinnamon, cinnamon, big cinnamon, and Chinese cassia. It is the dried bark of the genus Cinnamomum in the Lauraceae family. Its bark has an aromatic smell and can be used as a spice. The taste is similar to cinnamon, but it is spicier and thicker than cinnamon, and not as delicious as cinnamon. It is stripped from branches and stems and becomes curled into rolls after drying.

2. The difference between the two

1. Thickness: Compared with the two, cinnamon is thicker. Its thickness is usually between 0.2-0.8 cm, while cinnamon is only 0.1-0.2 cm thick, which can be clearly distinguished.

2. Appearance: Observe the colors of the two to be able to distinguish them. The outer surface of cinnamon is gray-brown and slightly rough. The color of the outer surface of cinnamon is darker, from black brown to dark brown, with grayish white spots on it.

3. Smell: You can also distinguish them by smell. The taste of cinnamon is very delicious and fragrant, just like the taste of mothballs. Cinnamon, on the other hand, has a stronger, spicy smell.

4. Cross section: Both are easy to break, but the cross section of cassia bark is flat after being broken, while cassia bark is not flat, which can distinguish them from this point.

5. Inner surface: The colors of the inner surfaces of the two are similar, but cassia bark has no oil marks after being scratched, while the oil marks of cassia are more obvious and can be distinguished by just scratching.
